last night i made oatmeal chocolate chip and oatmeal peanut butter chip cookies (from scratch)..and for lunch today i am having leftover creamy chicken and rice (it's a great and easy recipe)...
tonight...homemade lasagna. it is a recipe i haven't tried before...it has five cheeses...sausage and hamburger in it. and it take 2 1/2 hours to make! sweet...can't wait to eat it. mmmmm...

What recipe do you use for the creamy chicken and rice? I always cook my chicken from frozen (because I can NEVER remember to set it out to defrost in advance), and that always makes it dry. I have been experimenting with different recipes trying to find a way to make my frozen-cooked chicken taste a little more...edible...

it's a recipe from Tast of Home...
4 cups cooked rice
1/2 cup butter, divided
1/4 cup all-purpose flour
2 cups milk
2 teaspoons chicken bouillon granules
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/2 teaspoon pepper
4 to 5 cups cubed cooked chicken
12 ounces process American cheese, cubed
2 cups (16 oz) sour cream
1 1/4 cups crushed butter-flavored crackers

1. Spread rice into a greased shallow 3-qt. or 13-in. by 9-in by 2-in baking dish; set aside
2. In a saucepan, melt 1/4 cup butter; stir in flour until smooth. Gradually add milk, bouillon, seasoned salt, garlic powder and pepper. Bring to a boil; cook and stir for minutes or until thickened and bubbly. Reduce heat; add chicken, cheese and sour cream; stir until the cheese is melted. Pour over rice.
3. Melt the remaining butter; toss with crumbs. Sprinkle over the casserole. Bake, uncovered, at 425 for 10-15 minutes or until heated through.


Now, there are a few things I did...
1. the chicken bouillon granules...I just had cubes..so I got a sharp knife and broke it up a little..worked fine.
2. didn't use as much chicken as they said..it was still really good..i think 4 or 5 cups may be too much..unless you love meat.
2. we don't do processed cheese here...so i just used some grated chedder cheese...was great.

Why don't you just defrost your chicken a little in the microwave? I usually do that if I forget to set it out. But i always have it a little frozen when i cut it...makes it easier. but you cook the chicken first, then add it in the recipe.

anyway, that's it! it's easy to do..and oh so yummy. mmmmm.
